ST. PETER — Help has arrived for all the thirsty customers at the new Paddlefish Brewing in St. Peter.
Dave Long, Eric Johnson and brewer Luke Dragseth received a 10-barrel brewing tank Wednesday, which will allow them to increase their brewing capacity after struggling to keep up with demand since they opened in downtown St. Peter recently.
“We are ever-so-close to doubling our brewing capacity,” they said in a press release. “We still have a few things that need to be done to ensure these tanks (4,000 pounds when full) don’t fall through the floor, but once we do that, we should be in good shape from a supply perspective.”
They said they hope the first two batches using the new fermenters will be on tap in mid-March. They then plan to have all eight of their flagship beers and more rotating beers on tap soon thereafter.
The brewery had to close Wednesday night for the delivery of the barrels but was planning to be open Thursday.
Because of high demand, the brewery has had to close a few days since opening to catch up on brewing beer.
